Okay you guys! Going vegan has definitely been a fun challenge – and I’ve upped my pizza game by needing to make a vegan mozzarella cheese. After experimenting for several days, I’ve finally come up with a pretty good recipe.
May I present to you: TOFU-rella! So easy to make, all locally-sourced ingredients, tasty, AND STRINGY.
TOFURELLA INGREDIENTS:
1 block tofu
1/4c coconut cream/milk
1 c hot water
2-3 tbsp Tapioca starch (aka Tapioca flour. Cornstarch works as well, but it won’t make it stringy)
1 small garlic clove, minced
3/4 tsp salt, or to taste
1-2tsp lemon juice, and or Apple Cider Vinegar
Instructions: Blend all, then heat on the stove, stirring constantly until the desired consistency is reached, ~4min. Spread on pizzas, lasagnas, sandwiches, everything in site, etc etc etc.
